Origin: A multi - vineyard blend from Jonkershoek Valley and Helderberg foothills
Variety: 100% Cabernet Sauvignon
Soil type: Decomposed Granite and Sandstone
Harvest date: 25th of February to the 15th of March 2006
Yield: 6-8 tons/ha or 40 hl/ha - 52 hl/ha
Harvest stats: Grapes harvested between 23.9şB to 26.6şB;
Total acid 7.7 g/l to 8.4 g/l;
pH 3.27 to 3.41
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 18 months in French oak barrels of which 40% was new.
Bottling date: Bottled in November 2007 after egg white fining and light filtration
Analysis: Alcohol 14.0 percent;
Residual sugar 1.76 g/l;
Total acid 6.0 g/l;
pH 3.65
Tasting note: Medium red, purple in colour, the wine has high-toned blackcurrent, violet and cedar aromas with touches of mint. A rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins. This is a multi-faceted wine that needs time to mature.
