Harvest date: Harvesting commenced on the 13th of February and carried through to the 25th of February 2008

Harvest stats: Grapes harvested between 22.0şB to 23.5şB;
Total acid 7.2 g/l;
pH 3.3
Vinification: 33.3% fermented with native yeast in new 500l French oak barrels, all undergoing malolactic fermentation. 33.3% fermented in used 500l French oak barrels. No malolactic fermentation. The remaining 33.3% was tank fermented and left on the lees for 6 months.
Maturation: 6 months in the same barrels in which the wine fermented. Lees stirring (Batonage) every 4 weeks.
Bottled: Bottled in August 2008
Analysis: Alcohol 13.5 percent;
Residual sugar 2.5 g/l;
Total acid 6.0 g/l;
pH 3.5
Tasting note: Attractive green tints. Tight lemony/ lime aromas with green apple and a touch of vanilla. Tight focused palate with citrussy fruit and an elegant long finish.
