Harvest date: As per variety. Merlot commencing 27th February 2007 and Cabernet Sauvignon finishing 4th April 2007
Yield: 8 tons/ha or 54 hl/ha
Harvest stats: Grapes harvested between 23.0şB to 25.0şB;
Total acid 7.8 g/l to 8.6 g/l;
pH 3.2 to 3.4
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pumpovers until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 18 months in French oak barrels of which 15% was new. Balance 2nd and 3rd fill barrels
Bottling date: Bottled in January 2009
Analysis: Alcohol 13.5 percent;
Residual Sugar 2.0 g/l;
Total Acid 5.5 g/l;
pH 3.6
Tasting note: Attractive bright colour with good depth and intensity. Spicy lifted aromas with a hint of earthy complexity. Oak sits well and integrated with an elegant palate. Nicely textured palate has complexity which hold interest.
