Harvest stats: Grapes harvested at 23.2 şB;
Total Acid 6.8 g/l;
pH 3.25
Vinification: The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. 70% of the wine was fermented in French oak barrels whilst 30% fermented in tank. Both components were left on the lees for 8 months prior to bottling.
Bottling date: Bottled in November 2007
Analysis: Alcohol 13.5 percent;
Residual Sugar 1.6 g/l;
Total Acid 7.1 g/l;
pH 3.3
Tasting note: Pale to medium straw with vibrant green hues. Good intensity, ripe fruit, apple and ripe lemon, rich but refined flavours
