Vinification: The juice was handled reductively and left to settle for 3 days after which it was racked and innoculated to ferment at low temperatures. Left on the lees for 3 months before blending and bottling.

Residual sugar 1.5g/litre ;
Total acid 7.0g/litre ;
pH 3.25
Tasting note: Bright straw colour with greenish tinge. Expressive aroma with concentrated guava, nettle and late summer fruits. Rich texture an palate weight underpin juicy melon and mineral notes.
