Cabernet Sauvignon/Merlot 2001

Origin: Stellenbosch
Variety: Cabernet Sauvignon 50 percent
Merlot 50 percent
Soil type: Predominantly decomposed granite.
Harvest date: As per variety. Merlot commencing 19th February 2001 and Cabernet Sauvignon finishing mid March 2001.
Yield: 6 tons/ha or 40 hl/ha
Harvest statistics: Grapes harvested between 23.6şB to 25.4şB
TA 6.8 g/litre to 9.4 g/litre
pH 3.3 to 3.5
Vinification: Fermentation initiated in stainless steel tanks and underwent a series os pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 15 months in French oak barrels of which 25 percent was new. Balance 2nd and 3rd fill barrels.
Bottling: Bottled in November 2002.
Analysis: Alcohol 13.5 Vol percent
Residual sugar 1.6 g/litre
TA 6.0 g/litre
pH 3.50
Tasting note: Medium red, purple, in colour. Bright plum, cassis and fine minty touches. Younthful palate with plummy like fruit, balance by firm but accessible tannins.
