Age of vines: 9 - 16 years. Average 11 years.
Clone: Multi clonal planting on R99.
Harvest date: 3rd February 2003 - 20th Ferbruary 2003
Yield: 6.5 tons/ha
Fermentation: The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for 3 months before blending and bottling.
Bottling: June 2003
Analysis: Alcohol: 13.5 Vol% Residual sugar: 3.5 g/Litre Total Acid: 7.2 g/ Litre pH: 3.25
Tasting: Predominant flavours are those of tropical fruit with herbaceous overtones, whilst the overall impression is of elegance and delicacy with a long flavoursome finish.
