Harvest date: 20th February 2001
Yield: 6 tons/ha or 40 hl/ha
Harvest statistics: Grapes harvested between 24.6şB TA 7.5 g/litre pH 3.25
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Matruation: This wine spent 16 months in 50% new and the remainder in 2nd fill French oak barrels.
Bottling: Bottled in October 2002
Analysis: Alcohol 13.5 Vol% Residual sugar 1.5 g/litre TA 5.7 g/litre pH 3.5
Tasting note: Deep red, purple. Aromas of spice, white and black pepper. Blackberry fruit and hints of violets. Concentrated palate with complex array of juicy blackberry fruit, underlying spice and very fine tannins. Distinctive expression of its origin.
