Age of vines: 10-16 years Average 11 years
Clone: Multi clonal planting on R99 & R110.
Harvest date: 4th February 2004 - 22nd February 2004
Yield: 4.0 tons/ha
Fermentation: The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for 3 months before blending and bottling.
Bottling: June 2004
Analysis: Alcohol 13.5 Vol% Residual sugar 1.5 g/litre Total Acid 7.0 g/litre pH 3.35
Tasting note: Predominant flavours are those of tropical fruit with herbaceous overtones, whilst the overall impression is of elegance and delicacy with a long flavoursome finish.
