Cabernet Sauvignon/Merlot 2000

Origin: Stellenbosch
Variety: Cabernet Sauvignon 60%; Merlot 34%; Cabernet Franc 6%
Soil type: Predominantly decomposed granite.
Harvest date: As per variety. Merlot commencing 18th February 2000 and Cabernet Sauvignon finishing mid March 2000.
Yield: 6-8 tons/ha or 40 hl/ha – 55 hl/ha.
Harvest statistics: Grapes harvested between 23.6 to 25.4 ºB; TA 6.8 g/ℓ to 9.4 g/ℓ; pH 3.3 to 3.5
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 15 months in French oak barrels of which 30% was new.
Bottling: Bottled in August 2001.
Analysis: Alcohol 14.0 Vol%; Residual sugar 1.7 g/ℓ; TA 5.6 g/ℓ; PH 3.54
Tasting note: Medium red, purple, in colour. Bright plum, cassis and fine minty touches. Youthful palate with plummy like fruit, balanced by firm but accessible tannins.
