Origin: Groenekloof Ward, Darling Hills.
Variety: Sauvignon Blanc
Harvest date: 3rd March 2004
Yield: 3.4 tons/ha or 22 hl/ha
Harvest stats: Grapes harvested at 24.0şB to 25.4şB, TA 8.4 g/litre, pH 3.35
Vinification: The juice was handled reductuvely and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. 30% of the wine was fermented in French oak barrels whilst 70% fermented in tank. Both components were left on the lees for 8 months prior to bottling.
Bottled: Bottled in October 2004.
Analysis: Alcohol 14.0%, Residual sugar 1.8 g/litre, TA 6.8 g/litre, pH 3.39
Tasting note: Pale to medium straw with vibrant green hues. Good intensity , ripe fruit, apple and ripe lemon, rich but refined flavours.
