Cabernet Sauvignon/Merlot 2003

Origin: Stellenbosch
Variety: 50% Cabernet Sauvignon 50% Merlot
Soil type: Predominantly decomposed granite.
Harvest date: As per variety. Merlot commencing 24th February 2003 and Cabernet Sauvignon finishing mid March 2003.
Yield: 8 tons/ha or 50 hl/ha
Harvest stats: Grapes harvested between 23.6şB to 25.4şB,
TA 6.8 g/litre to 9.4 g/litre,
pH 3.3 to 3.5
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 15 months in French oak barrels of which 25% was new. Balance 2nd and 3rd fill barrels.
Bottled: Bottled in October 2004
Analysis: Alcohol 14.0 percent,
Residual sugar 2.5 g/litre,
TA 6.3 g/litre,
pH 3.48
Tasting note: Medium red, purple in colour. Bright plum, cassis and fine minty touches. Youthful palate with plummy like fruit, balanced by firm but accessible tannins.
