Origin: Stellenbosch. A multi-vineyard blend from the Jonkershoek-valley, Stellenbosch and Firgrove.
Variety: 100% Shiraz
Soil type: Decomposed granite
Harvest date: 12th March 2003
Yield: 6 tons/ha or 40 hl/ha
Harvest stats: Harvested between 24.0şB to 25.2şB,
TA 7.2 g/litre to 8.0 g/litre,
pH 3.36 to 3.4
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 15 months in French oak of which 25% was new.
Bottled: Bottled in October 2004.
Analysis: Alcohol 14.0 percent,
Residual sugar 2.3 g/litre,
TA 6.4 g/litre,
pH 3.54
Tasting note: Red/purple colour. Very young wine needing time to meld. Pure blackberry fruit with underlying white pepper and liquorice aromas and hints of violets. Elegant but concentrated palate with ripe fruit, underlying cedar spice and finely balanced tannin characters.
