Cabernet Sauvignon 2003
Vintage: 2003
Origin: A multi-vineyard blend from the Jonkershoek Valley and Firgrove.
Variety: 100% Cabernet Sauvignon
Soil type: Decomposed granite and sandstone.
Harvest date: Vintage commenced on the 27th of February 2003 and completed on the 18th of March 2003.
Yield: Between 7 and 9 tons/ha or 42 hl/ha - 54 hl/ha.
Harvest stats: Harvested between 23.5şB to 26.0şB, TA 6.7 g/litre to 9.0 g/litre, pH 3.2 to 3.4
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 18 months in French oak barrels of which 40% was new.
Bottled: Bottled in November 2004 after egg white fining and light filtration.
Analysis: Alcohol 13.5%, Residual sugar 1.4 g/litre, TA 6.0 g/litre, pH 3.55
Tasting note: Medium red, purple in colour, the wine has high-toned blackcurrent, violet and cedar aromas with touches of mint, so typical of a Jonkershoek wine. A rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins. This is a multi faceted wine that needs time to mature.
