Cabernet Sauvignon 2004
Vintage: 2004
Origin: A multi-vineyard blend from the Jonkershoek Valley and Firgrove area.
Variety: 100% Cabernet Sauvignon
Soil type: Decomposed Granite and Sandstone.
Harvest date: 27th of February to the 18th of March 2004.
Yield: 6 - 8 tons/ha or 40 hl/ha - 52 hl/ha
Harvest stats: Grapes harvested between 23.5şB to 26.0şB; Total Acid 6.7 g/litre to 9.0 g/litre; pH 3.2 to 3.4
Vinification: Fermentation initiated in stainless steel fanks and underwent a series of pump overs until dry. Futher maceration allowed before drawing off and light pressing.
Maturation: This wine spent 16 months in French oak barrels of which 40% was new.
Bottling date: Bottled in September 2005 after egg white fining and light filtration.
Analysis: Alcohol 14.0%; Residual Sugar 1.7 g/litre; Total Acid 6.0 g/litre; pH 3.7
Tasting note: Medium red, purple in colour, the wine has high-toned blackcurrant, violet and cedar aromas with touches of mint. A rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins. This is a multi faceted wine that needs time to mature.
