Harvest date: Harvesting commenced on the 10th of February and carried through to the 24th of February 2005.
Yield: 7.0 tons/ha or 42 hl/ha
Havest stats: Grapes harvested between 22.0şB to 25.4şB; Total Acid 8.8 g/litre; pH 3.2
Vinification: 70% Barrel fermented, using 30% new and the balance in 2nd and 3rd fill French oak. 30% Malolactic fermentation. 30% Tank fermented. No Malolactic.
Maturation: 9 Months in the same barrels in which the wine fermented. Lees stirring (Batonage) every four weeks.
Bottling date: Bottled in January 2006.
Analysis: Alcohol 13.5%; Residual Sugar 3.0g/litre; Total Acid 6.8 g/litre; pH 3.36
Tasting note: Attractive green tints. Tight lemony/lime aromas with a touch of vanilla. Tight focused palate with citrussy fruit and an elegant long finish.
