Total Acid 6.7 - 11.5 g/litre;
pH 3.02 - 3.4
Fermentation: The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for 3 months before blending and bottling.
Bottling date: Bottled in June 2007
Analysis: Alcohol 3.5 percent;
Residual Sugar 3.0 g/litre;
Total Acid 7.0 g/litre;
pH 3.35
Tasting note: Predominant flavours are those of tropical fruit with herbaceous overtones, whilst the overall impression is of elegance and delicacy with a long flavoursome finish.
