Harvest date: Harvesting commenced on the 10th of February and carried through to the 24th of February.
Yield: 6 tons/ ha or 40 hl/ ha
Harvest stats: Grapes harvested between 22.0şB to 24.5şB;
Total Acid 7.6 g/litre;
pH 3.25
Vinification: 60% Barrel fermented, using 30% new and the balance in 2nd and 3rd fill French oak. 30% Malolactic fermentation. Wild yeast fermentation. 40% tank fermented. No malolactic.
Maturation: 6 Months in the same barrels in which the wine fermented. Lees stirring (Batonage) every four weeks.
Bottled: Bottled in August 2007
Analysis: Alcohol 14.0 percent;
Residual Sugar 3.0 g/litre;
Total Acid 6.5 g/litre;
pH 3.5
Tasting note: Attractive green tints. Tight lemony/lime aromas with green apple and a touch of vanilla. Tight focused palate with citrussy fruit and an elegant long finish.
