Origin: A multi-vineyard blend from Jonkershoek Valley and Helderberg foothills.
Variety: 100% Cabernet Sauvignon
Soil type: Decomposed Granite and Sandstone
Harvest date: 25th of February to the 15th March 2005
Yield: 6 - 8 tons/ha or 40 hl/ha - 52 hl/ha
Harvest stats: Grapes harvested between 23.5şB to 26.0şB;
Total Acid 6.7 g/litre to 9.0 g/litre;
pH 3.2 to 3.4
Vinification: Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration allowed before drawing off and light pressing.
Maturation: This wine spent 16 months in French oak barrels of which 40% was new
Bottling date: Bottled in October 2006 after egg white fining and light filtration
Analysis: Alcohol 14.0 percent;
Residual Sugar 1.7 g/litre;
Total Acid 6.0 g/litre;
pH 3.7
Tasting note: Medium red, purple in colour, the wine has high-toned blackcurrent, violet and cedar aromas with touches of mint. A rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins. This is a multi faceted wine that needs time to mature.
