Vinification: Fermentation initiated in open top fermenters and underwent a series of pump overs, punching as well as rack and returns.
Maturation: This wine spent 16 months in 100% new French oak barrels

Residual sugar 1.5 g/litre;
Total Acid 6.0 g/litre;
pH 3.6
Tasting note: Deep red, purple. Aromas of spice, white and black pepper. Blackberry fruit and hints of violets. Concentrated palate with complex array of juicy blackberry fruit, underlying spice and very fine tannins. Distinctive expression of its origin.
