Sauvignon Blanc 2009

The Vineyards

Sourced from a multi-blend vineyard from Groenekloof and Stellenbosch with an average of 14 years of age.  Soils mostly decomposed granite  and shale.

The Grape Variety

100% Sauvignon Blanc

Winemaking

Harvest commenced on 9 February and carried through to 27 February. Grapes were harvested at 21.0 – 24.0°B with a total acid of 6.1-11.2 g/l and a pH of 3.3-3.6.

Whole bunch pressed. The juice was handled reductively and left to settle for 3 days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for 3 months before blending and bottling.

Bottled in July 2009.

Tasting notes

Predominant flavours are those of tropical fruit with herbaceous overtones, whilst the overall impression is of elegance and delicacy with a long flavoursome finish.
