Cabernet Sauvignon 2009

The Jonkershoek Valley and more specifically the south facing slopes are of the coolest sites in Stellenbosch. The vineyards are also influenced by southerly breezes during the summer months which have a beneficial effect. Further parcels of fruit are sourced from complimentary sites within the Stellenbosch area.

The Vineyards

Trellised vineyards with supplementary irrigation grown on mainly decomposed granite soils.

The Grape Variety

100% Cabernet Sauvignon.

Winemaking

Harvest commenced on 26 February and completely on 20 March. Grapes were harvested between 23.8°B and 25°B with a total acid of 3.46 g/l and a pH of 7.3.

Fermentation initiated in stainless steel tanks and underwent a series of pump overs until dry. Further maceration was allowed before drawing off and light pressing.

The wine spent 18 months in 30% new French oak barrels. The balance in second and third fill.

Bottled in November 2010.

Tasting notes

Medium red, purple in colour, the wine has tones of blackcurrant, violet and cedar aromas with touches of mint. The rich, ripe opulent but youthful palate has plummy fruit, a background of new oak and fine tannins. This is a multi-faceted wine that needs time to mature.
