The Vineyards
Sourced from a multi-vineyard blend, average 12 years in age, in Stellenbosch, Groenekloof and Elgin. The soils are mostly decomposed granite with varying clay percentages.
The Grape Variety
100% Sauvignon blanc.
Winemaking
Harvest commenced from 2 February and completed on 25 February according to the different regions. Grapes were harvested between 20.5°B and 23.7°B with a total acid of 8.2 – 10.9 g/l and a pH of 3.1 to 3.33.
The juice was handled reductively and left to settle for three days after which it was racked and inoculated to ferment at low temperatures. Left on the lees for three months before blending and bottling.
Bottled in August 2010.

Tasting notes
Predominant flavours are those of tropical fruit with herbaceous overtones, whilst the overall impression is of elegance and delicacy with a long flavoursome finish.
